
Ingredients
- 1/3 Cup Obento Sake
- 1/3 Cup Obento Mirin
- 1 1/4 Tbsp Brown Sugar
- 1/3 Cup Soy Sauce
- 1kg Chicken Thigh Fillets
- 1 Chopped Avocado
- 1 cup baby spinach
- 1 cup grated carrot
- 1/2 green capsicum
- 1 cup baby tomatoes
- 1 small can of corn
- 1 large pack of microwave brown rice
Method
- Place Sake, Mirin, brown sugar and soy sauce in a pouring jug. Mix well.
- Prepare Salad ingredients and set aside.
- Cook the chicken in a pan for approximately 5 minutes per side, ten minutes in total.
- Cook your microwave rice according to pack instructions and set aside.
- Pour the sauce on top of the chicken and cook for two minutes.
- Place the rice and salad ingredients into serving bowls. Top with sliced chicken and pour excess sauce over chicken.
- Serve with a spoonful of mayonnaise and a sprinkle of sesame seeds if desired. Enjoy. It should serve 4-6 people.
