
Ingredients
- 1 large onion
- 4 cloves garlic crushed
- 500g chicken breast cut into strips
- 2/3 jar Valcom Thai Laksa Paste
- 1 carrot sliced
- 1/2 red capsicum cut into strips
- 1/2 cup frozen green peas
- 1 cup cooked cubed roasted pumpkin
- 1 can coconut milk
- 1 packet flat rice noodles pre cooked as per packet instructions
- Salt & pepper to season
Method
- Heat a deep pan on medium heat with 2 tablespoons light olive oil.
- Add onions and carrot stir occasionally until fragrant.
- Add the garlic stir and saute 1 minute.
- Add the Valcom Laksa Paste stir and simmer 2 mins
- Add chicken strip's stir and saute 3 minutes
- Add coconut milk, peas and capsicum and stir through. Bring to the boil then add rice noodles and pumpkin and allow to simmer for 5 minutes.Season with salt and pepper to taste. Ready to serve.
