- 2 Chicken Breast,2carrots,100g beans,200g mushrooms 1 chilli 2 cloves garlic,2cmginger half bunch coriander
- Tsp Turmeric,250mlchicken stock,1 can coconut milk 1 tbsHoney 1/12 tbs rice vinegar juice of 1 lime
Method
- Fry chicken breast until brown and cooked through, Remove from pan set aside
- Cook carrot rounds and halved beans until soft add mushrooms and can of drained corn until soft Make a well in the middle add garlic,chilli, ginger and turmeric until fragrant add chicken stock honey rice vinegar simmer for ten minutes Add coriander and lime just before serving
