
Ingredients
- 1 red capsicum - chopped
- 1 green capsicum - chopped
- 250 grams of pineapple chunks
- 1/2 cup of Obento rice wine vinegar
- 1/2 teaspoon of garlic paste
- 1 Carrot - chopped
- 1/2 cup castor sugar
- 4 tablespoons of ketchup
- 1 teaspoon of sesame seeds (garnish)
- 1 tablespoon of peanut oil
- 400 grams of pork scotch fillet
Method
- Cut scotch fillet into cubes roughly 1.5-2 centimetres - approximately 2 minutes
- Add oil to pan and heat on medium setting, adding garlic paste and heat approx 30 seconds. Add the cubes to the pan and cook - approximately 3 minutes
- Roughly chop capsicums, slice carrot and drain pineapple chunks - approximately 2 minutes
- Add capsicums, slice carrot and pineapple chunks to the pan and stir in with the pork - approx 2 minutes
- Add the castor sugar, rice wine vinegar and ketchup and stir regularly 9 - 10 minutes.
- Plate up and sprinkle sesame seeds on top. Enjoy
