Sushimi tuna & edamame with brown rice, mirin & seaweed

Ingredients
- Tuna (200 g)
- Brown rice (1 cup)
- Edamame (1 cup)
- Mirin (1 tbsp)
- Dried seaweed (1 tbsp)
- Sesame seeds (1 tbsp)
- Pickled ginger (1 tbsp)

Method
- Edamame: blanch for 2 mins in boiling water and then in iced water. Peel and leave aside.
- Rice: cook in boiling, then simmering water, for 15 minutes.
- Tuna: Dice into cubes just before serving.
- Seaweed: Soak in 2 tbsp water for 2 minutes, then drain.
- Drain rice and mix through seaweed and mirin and allow to cool. Serve seaweed rice, edamame and tuna, and sprinkle with dried seaweed, sesame seeds and pickled ginger. Add light soy sauce to taste.
