
Ingredients
- Nori wraps x2 packs of 10
- 2 eggs, beaten
- 2 cups sushi rice or medium grain
- 1 Lebanese Cucumber, cut into finger length strips
- Sundried tomato halves 1/2 cup, chopped
- Mayonnaise, 1/3 cup
- Large tin of tuna 400g
- 1 avocado, finely sliced into strips
- Sesame seeds 1/4 cup
- Soy sauce
- Water for rice
Method
- Rinse rice and as per rice cooker set up prepare rice and set to cook
- Slice cucumber and avocado into finger slice size and place in a small bowl for the table
- Drain and chop sundried tomatoes and place in bowl for table
- Drain tuna and place in a mixing bowl, add 2 tablespoons of mayonnaise and mix well, pour into a bowl for the table
- Chop all seaweed wrappers in half (or also again into squares if you prefer) and place on a tray for the table (depending on how many guests are eating).
- Beat 2 eggs in a bowl and pan fry in a pre- heated frying pan with a tablespoon of olive oil, once first side is lightly brown, flip to cook on the other side. Once cooked remove from pan and slice into rectangular pieces and place on a plate for the table.
- Once rice is cooked, remove lid and allow to cook slightly. You can let rice completely cool or serve warm. Rice can be prepared earlier in the day and placed in fridge until needed.
- Serve all plates/ bowls on the table for each person to top their nori wrapper with rice and ingredients of their choice. Wrappers can be simply folded together like a taco or wrapped around more like a sushi wrap. These are great for a light and quick to serve and prepare family meal!
