
Ingredients
- Sushi rice (cooked)
- Obento Yaki Nori for sushi
- Kimchi
- 3 eggs
- 3 tbsp liquid vegetable stock
- 1 tsp white sugar
- 1 tsp vegetable oil
- Kewpie Mayonnaise
- Vegetables such as lettuce and cucumber, sliced very thinly
Method
- In a bowl, mix three eggs with vegetable stock and sugar.
- Heat vegetable oil in a medium sized fry pan on medium heat, and pour in the egg mixture.
- Flip the egg omelette and set aside to cool.
- Place a sheet of nori on a chopping board and make one cut from the bottom middle of the sheet to the centre of the nori.
- Imagining the sheet of nori as four equal sections, put 2 tablespoons of sushi rice in the bottom left section of the sheet and flatten gently.
- In the section above the sushi rice, add 2 tablespoons of fried egg and flatten with a spoon. Drizzle a small amount of Kewpie mayonnaise on the egg.
- In the section to the right of the egg, add 1 tablespoon of kimchi, 2 slices of cucumber and a few shreds of lettuce and flatten with a spoon. The filling sections should be next to each other.
- In the section below the kimchi and vegetables, put 2 tablespoons of sushi rice and flatten with a spoon. The sushi rice sections should be next to each other.
- Start folding the sections, Starting from the bottom left rice section fold this up over the egg, then to the right over the kimchi and vegetables, and finally down over the rice section.
- Gently press your Sushi sandwich down to flatten, tucking in any filling that is sticking out.
