
Ingredients
- Obento rice wine vinegar
- Sun rice sushi rice
- Avacado
- Ccumber
- Obento yaki nori for sushi
Method
- Cook such rice in rice cooker and allow to cool enough to handle
- Add 2 tbs of obento rice wine vinegar to cooled rice and mix with wooden spoon
- Lay yaka nori shiny side face down. Using a wooden spoon constantly dipped in a bowl of water to avoid rice sticking, spoon a square layer of rice onto nori covering the entire sheet except for a 3cm gap running across the top
- Add avacado and cucumber n a line across the middle of the square. Less is more and will be easier to roll.
- Starting at the end closest to you, gently roll the nori into a roll away from you, tucking the rice and ingredients under using your fingers until reaching the 3cm gap at the top of the nori. Lightly wet the gap with water until fully moist then roll the remaining nori onto itself. It will seal with the water like sealing an envelope.
