
Ingredients
- Obento Yaki Nori
- Prawns
- Rice
- Avocado, cucumber and sweet potato
- Kewpie and wasabi
- Sushi ginger
Method
- Cook rice and julienne avocado, cucumber and roasted sweet potato.
- Once rice has cooled, stir through kewpie and wasabi. Dice or half prawns.
- Place yaki nori on bamboo Matt, cover with a thin layer of rice mixture leaving 2cm at end. Place selected ingredients in lengthwise rows. Tightly roll using bamboo Matt, wet last 2cm of yaki nori to seal sushi roll.
- Repeat step 3 for desired quality, and cut to desired size. Plate up and serve with sushi ginger or favourite Soy sauce.
