
Ingredients
- 1 1/2 cups of cooked sushi rice
- 3 sheets of obento yaki nori sushi (cut in 4 squares per sheet)
- 1 piece of skinless salmon (140 grams)
- pinch of salt
- 1 teaspoon of soy sauce
- 1 teapsoon kewpie sriracha mayonnaise
- sesame seeds for garnish
- 1/2 Avacado diced into cubes
Method
- Rinse dry rice and cook as per packet instructions, I used my rice cooker
- Cut the salmon into small cubes and place them into a bowl. Add soy sauce, a pinch of salt and kewpie sriracha mayonnaise and stir through to coat the salmon
- Set the cooked rice aside and cut the nori into quarters. Once the rice is cooked add a tablespoon of rice to the nori and press down to fill out the square making a thin layer of rice, then place into the muffin tin which has been lightly greased
- Place each nori and rice square into the muffin tin and make sure they are all even with the same amounts of rice. Add a tablespoon of cubed marinated salmon on top of the rice
- Bake in a preheated 200C oven for about 15 minutes
- Once cooked take out of the oven and add avocado cubes on top of the salmon followed by a drizzle kewpie sriracha mayonnaise and sesame seeds
