
Ingredients
- For the rice: 2 cups of cooked sushi rice. 2 tablespoons of Obento sushi seasoning. 1 tablespoon of Obento mirin. Pinch of salt.
- For the topping: 500 gr of chicken. Omelette made with two eggs. 1 small onion. 1 clove of garlic. 1 avocado. Teriyaki sauce to taste. Kewpie mayonnaise (Lots). Furikake. Roasted Korean seaweed.
Method
- Instructions: While rice is cooking as per package instructions, shallow fry the onion, add garlic then chicken with teriyaki sauce, cook and set aside. Make an omelette and set aside. Mix sushi seasoning, salt and mirin in a bowl and add it to the cooked rice.
- Assembling: In a baking pan add the rice to the bottom and press, sprinkle some Furikake on top add the cooked chicken, omelette pieces and strips of Kewpie mayonnaise. Bake for about 15 minutes until crispy, add fresh avocado on top, more furikake and more kewpie mayonnaise. Scoop a piece of bake sushi and place it on a piece of roasted Korean seaweed, add extra kewpie mayonnaise, yum!
