
Ingredients
- 2 tablespoons Valcom green curry paste
- 270 mls Light coconut Milk
- 1 fillet of Salmon
- 2 tablespoons of Lemongrass and kaffir lime
- 2 tsp Fish sauce
- 500 ml Water or stock of choice
- 1 cup Rice
- Lots of chilli and veges of choice
Method
- Pre heat over to 200 degrees Celsius.Meanwhile, Heat a wok over high heat, add oil, and add veges of choice and cook for 5 mins or until soft.
- Add valcom green curry paste, lemongrass and kaffir lime, cooking through the veges for 30 seconds.
- Add rice and stir through paste for 30 seconds.
- Add coconut milk and water, and stir through throughly.
- Season with salt and pepper.
- Cover and cook on low heat for 20 minutes.
- Place salmon in tray, season with salt and pepper and cook in oven for 13 minutes.
- Flake salmon and add to the wok.
- Sprinkle with coriander, sliced chilli and lime!
