
Ingredients
- Coles microwave Jasmine rice 250g
- Salmon fillet (with or without skin)
- Obento Teriyaki marinade 250ml
- Snow peas
- Broccolini
- Pak choy
- Olive oil
- 2 tablespoons Soy sauce
- 1 clove Garlic
Method
- Place salmon in a bowl and pour half a bottle of the teriyaki marinade over the top. Cover with foil and place in the fridge for 1-2 hours to marinate.
- Heat a large fry pan on medium heat. Add a drizzle of oil and add the salmon. Cook the salmon on each side for 3-4 minutes or until desired doneness. Remove salmon from pan.
- Return pan to medium-high heat and add snow peas, broccolini and pak choy with 2 tablespoons of soy sauce, a drizzle of olive oil and a crushed clove of garlic. Stir for 3-4 minutes.
- Open the rice packet and microwave for 90 seconds.
- Add rice, salmon and veggies to a bowl. Pour some of the remaining marinade on the salmon and serve.
