
Ingredients
- 500 grams salmon fillets
- 10 tbsp KEWPIE mayonnaise
- 3 tbsp Obento sushi & sashimi soy sauce
- 2 tbsp lemon juice
- 1 tsp lemon zest
- 1 tsp sweet paprika
- 1 tbsp crushed ginger
- Salt and pepper
- 2 x 250g microwave rice packets
- 1 zucchini
- 1 broccolini bunch
- 2 tbsp olive oil
- 2 tbsp fried garlic
- Sesame seeds
- Lemon wedges
- Olive oil spray (optional)
Method
- Let's get Asian inspired! In a medium mixing bowl, whisk together the KEWPIE mayonnaise, Obento sushi & sashimi soy sauce, lemon juice, lemon zest, paprika, ginger, salt and pepper.
- Line the air fryer with some parchment paper or spray the basket with some olive oil spray. Add the salmon pieces to the air fryer, skin side down.
- Spoon a thick layer of the mayo mixture onto the top of the salmon pieces. Don't worry if some mayo mixture slides off the salmon. Cook the salmon at 200 degrees Celcius for 15 minutes.
- While the salmon is cooking, cut the zucchini and broccolini into small pieces. Add to a bowl with the olive oil and fried garlic and mix through.
- After the salmon has cooked, remove salmon from the air fryer basket and set aside. Add the zucchini and broccolini to the air fryer basket and cook at 180 degrees Celcius for 5 minutes.
- While the vegetables are in the air fryer, cook the microwave rice packets as per the instructions.
- Add the cooked rice to one side of your serving bowl, add the garlic greens to the other side. Place the salmon on top of the rice, and garnish salmon and greens with sesame seeds. Add a wedge of lemon and you are ready to enjoy and be Asian inspired now and into the future! Serves 4.
