
Ingredients
- Arborio rice
- Kewpie mayo
- Giardiniera
- Smoked leg ham
- Canned tuna
- Capers
- Lemon zest
- Anchovies
- Green pitted olives
- Fresh bocconcini cheese
- Sundried tomatoes
- Oregano
- Extra virgin olive oil
- Artichokes in oil
Method
- Boil rice for approximately 15 mins or till ‘al dente’
- Chop all remaining ingredients in a bowl, add mayo, oregano, zests, olive oil and season.
- Stir to combine and serve at room temperature.
