Ingredients
- Chicken breast x 2
- Soy sauce x 1/3 cup
- Mirin x 1/3 cup
- Sesame oil x 1 tbsp
- Pickled ginger to taste
- Spring onion x 3
- Enoki mushroom x 3/4 cup
- Soba noodle x 1/2 packet
- Brown sugar
- Rice wine vinegar
Method
- Dice chicken and spring onion. Set onion aside
- Brown chicken
- Mix all liquids together with sugar
- Pour 1/3 of marinade mix into chicken whilst cooking
- Remove chicken from pan once cooked
- Pour marinade into pan. Once sticky add soba, 2/3 of spring onion and enoki until covered.
- Mix together with chicken in bowl. Garnish with left over spring onion and pickled ginger
