
Ingredients
- S&B golden curry
- 600g chicken breast
- 180g carrot
- 160g potato
- 100g parsnip
- 600ml cold water
- 1 tsp curry powder
- 1/2 tsp turmeric
- 1/2 tsp cumin
- 1 cup basmati rice
- 2 brown onions
- Tbs olive oil
Method
- Chop vegetables into 2cm chunks
- Heat pan with oil add onion
- When onion is brown add chopped vegetables, cook for 5 mins
- Cut up chicken into 2cm chunks and add to pan with vegetables. Cook until just cooked through while stirring.
- Add water and simmer for 20 minutes
- Add S&B golden curry and additional spices
- Lightly simmer for 5 mins
- Cook rice and then serve curry with rice.
