
Ingredients
- 180g dried soba noodles
- 100g smoked salmon
- 1 cucumber, diced
- 1 tomato, diced
- 1/2 large avocado, diced
- 2 cups shredded baby cos lettuce
- 4 Tablespoons Kewpie roasted sesame dressing
- 1 Tablespoon sriracha sauce
- 1 teaspoon sesame oil
- 1 teaspoon wasabi
- 1 Tablespoon lemon juice
- 1 teaspoon soy sauce
Method
- Cook soba noodles according to packet instructions.
- To make the salad dressing: mix together sesame dressing, sriracha, sesame oil, soy sauce, wasabi and lemon juice until well combined.
- Cut salmon into small bite-sized pieces
- Assemble noodles, vegetables and salmon pieces in a bowl. Mix through the salad dressing. Sprinkle with some furikake on top to serve (optional).
