
Ingredients
- 1 kg seafood mix of your choice
- 2 Tbsp butter
- 6 cloves of garlic, minced
- 2 crushed ginger segments
- 1 piece of corn, cut into 3-4 pieces
- 12 Tbsp ABC Original Chilli Sauce
- 6 Tbsp Tomato sauce
- 1 Tbsp Lee Kum Kee Light Soy Sauce
- 5 Tbsp Oyster sauce
- 200 cc water
- 2 Tbsp sugar
- For Battered Fish (Optional): 5 Fish Fillets 1/2 cup self raising flour 125 cc beer or soda water1 Tbsp vinegar
Method
- For the Spicy Seafood Mix: In a large saucepan boil corn on the cob (3-4 minutes) in the hot water, then Add all of the seafood mix cooked for 2-3 minutes. Drain and set aside.
- In the frying pan, melt the butter. Sauté garlic and ginger until aromatic. Add water and all of the sauce and sugar until it’s boiled. For a fine and clear liquid I recommend to strain them and put it back in frying pan.
- Put boiled corn on the cob and the seafood to the sauce, continue to cook for a minute. Then serve
- For the battered fish, it is optional but will make your seafood bowl more festive. Mix all of the ingredients, using a whisk to stir until well combine.
- Heat up oil to deep fryer or a large saucepan over high heat.
- Dip fish fillets into the batter and deep fry until crisps and golden brown. And now you can serve it along with the spicy seafood mix and lemon wedges. Enjoy!
