
Ingredients
- ***Spicy Peanut Satay Sauce ingredients:1/4 cup crunchy peanut butter4 tbsp roasted / crushed peanuts 1/2 TSP freshly grated ginger1/2 TSP minced garlic1 tsp minced shallots1/4 cup rice wine vinegar1/4 mirin1/4 soy sauce1/4 cup sweet chilli sauce3 fresh kaffir lime leaves finely chopped1 tsp sesame oil
- ***Mushroom & Tofu skewers8 pieces Swiss brown Mushroom ( or button mushrooms) cut on half lengthwise 1 packet firm tofu - cut into 1/2" slices ( can be cut into flower shaped with cookie cutter) 1/4 cup Soy Sauce1 tsp minced ginger1/2 tsp sesame oil 2 TSP Sesame SeedsBamboo skewers ( soaked in water to prevent burning)
- **** Satay Noodles:2 cups cooked ramen noodles1/2 TSP minced garlic 1 can Valcom Water Chestnut Slices ( drain liquid from can )1tsp peanut or vegetable oil Chopped fresh corianderThinly sliced carrotChopped green onionFresh limes slicesSteamed boy choySliced fresh chilli ( optional)
Method
- ***Spicy Peanut Satay Sauce:Heat Sesame Oil in heavy bottomed pot - add: ginger , garlic, shallots & saute for 2 mins. Add remaining ingredients and bring to a simmer , stirring constantly - peanut sauce will thicken. Simmer 5 mins then remove from heat untill ready to use. ( If too thick add a little water to thin it out)
- ***Soy~Ginger Tofu & Mushroom SkewersPlace sliced Tofu & mushrooms into a bowl . Whisk together Soy sauce, ginger , sesame oil & Sesame Seeds. Pour mixture over tofu & mushrooms & let marinade for 1 hour. After 1 hour remove from marinade & thread tofu & mushrooms into bamboo skewers .Cook Tofu & Mushroom Skewers over chargrill/ BBQ for approx 4-5 mins , flipping to grill both sides. Set aside & keep warm while preparing Noodles
- ***For Satay Noodles:Heat oil in pan , add garlic , carrot & sliced water chestnuts and saute for 1 minute. Add cooked ramen Noodles to pan & add peanut sauce untill noodles are coated . Add fresh coriander.Place Satay Noodles on plate with steamed bok choy. Top noodles with fresh coriander , chopped spring onion, lime slice , fresh chilli ( optional) and Tofu~ Mushroom Skewers. Serve additional Peanut Satay Sauce on the side
