
Ingredients
- 3 sheets of Obento Yaki Nori paper
- 1 ½ cups cooked sushi rice
- 500g salmon – skin removed and cubed
- 2 tbs sesame oil (or olive oil)
- 1 tbs soy sauce
- 1 tbs honey
- ½ tbs each: Garlic powder Onion powder Chilli powder Paprika Oregano
- ¼ cup kewpie mayo
- 2 tsp Siracha sauce
- Avocado slices
Method
- Pre heat oven to 200c.
- Add the spices, oil, and honey to the cubed salmon, mix gently ensure salmon is fully coated.
- Cut nori into squares.On each nori slice add 1 heaped tsp of rice and spread out slightly.Mould each rice covered nori into a muffin tin
- Divide the salmon into the nori rice
- Bake muffins in oven for 15 mins
- Mix Kewpie mayo and sriracha to make the spicy mayo
- Cool muffins then place sliced avocado on each muffin and drizzle with spicy mayo.
