
Ingredients
- 2 pieces of Atlantic salmon-Skin off
- 2 cups of Steamed rice
- 3 sheets of Obento yaki nori
- 1x Spring onion
- 2T Soy sauce
- 1T Honey
- 2t Sesame oil
- 1/2t Garlic powder
- 1 Cucumber
- Kewpie mayonnaise
- Kewpie Sriracha mayonnaise
- Black sesame seeds
- 5 sprigs of chives
Method
- Preheat a fan forced oven to 200 degrees. Cut 3 nori sheets into quarters.
- Mix together the soy sauce, honey, sesame oil, garlic powder and sliced spring onion in a bowl. Cut the salmon pieces into small cubes approx 1cm cubed and add to the bowl. Mix these ingredients together to coat the salmon.
- Place a spoonful of steamed rice into the middle of a nori square and press into the muffin tray. Repeat this process for all 12 nori squares. Add a spoonful of salmon to each of the rice cups and place in the oven for 12minutes.
- Whilst the rice cups are in the oven, dice your cucumber into small cubes approx 1cm cubed-Alternatively you could substitute for avocado slices however the cucumber adds an element of crunch to the dish.
- Once the rice cups are out of the oven, place a few cubes of cucumber (or avocado) on top of the salmon.
- Drizzle Kewpie mayonnaise and Kewpie sriracha mayonnaise over the top of the sushi cups and garnish with chopped chives and sesame seeds.
