
Ingredients
- Udon noodles
- Dried shittake mushroom
- Brown mushroom, sliced
- Buk choy
- Golden curry mix: hot
- Mirin seasoning
- Soy sauce
- Garlic
- Chilli
- Water
- Sesame kewpie mayo
Method
- Prepare dried shittake mushrooms by placing them in warm water for 30 mins, then drain them
- Bring 500mls water to a simmer
- Add golden curry mix to water and allow it to dissolve
- Add brown mushrooms, allow to cook for 2 mins
- Add shittake mushrooms, chilli, garlic, soy sauce, mirin and udon noodles
- Cook for a further 5 mins
- Plate up udon and mushrooms with a ladle of the curry mixture, add buk choy and sesame kewpie to finish
