
Ingredients
- Spice rub
- 2 teaspoons smoked paprika
- 1 teaspoon dry mustard
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon ground star anise
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground allspice
- Ginger chilli glaze
- 2 tablespoons oil
- 5 cm piece ginger finely chopped
- 6 cloves garlic finely chopped
- 2 tablespoons ABC original chili sauce
- 1/2 cup honey
- 1/4 cup of soy sauce
- 2 duck breasts
- Cooked rice
- Salad
Method
- Preheat oven to 190
- Score skin of duck and season with salt and pepper
- Cover meat side of breasts with spice rub
- Preheat pan to medium and cook breasts skin side down for 5 minutes with no oil. Turn and cook for another 2 minutes
- Turn skin side up and put pan in oven for another 6-8 minutes. Rest for 5 minutes
- Heat oil in small pan and cook garlic and ginger until soft. Add chili sauce, honey and soy and heat until honey has melted
- Slice duck breast and serve on rice with salad. Pour over chilli glaze
