
Ingredients
- 1 packet Soba Noodles
- 2-3 bunches Broccolini
- 2 stems Spring Onion
- 2 Eggs
- 500g Any kind of mince
- Salt and pepper as preferred
- 2 tsp Ground coriander seeds
- 1 tbsp Garlic
- 4 tbsp Sweet soy sauce
- 2 tsp Sesame oil
- 3 tbsp Oyster sauce
- 4 tbsp soy sauce
- Crushed peanuts (optional)
Method
- Cut up spring onion into thin slices. Cut up broccolini into thirds.
- Put a small pot of water on to boil (use hot tap water or kettle water to speed up boiling process).
- Put mince and salt, pepper and ground coriander seed into a frying pan or wok. Cook until brown and add garlic at the end.
- Make a hole space in the middle of the mince and crack in eggs. Wish with a fork to scramble and mix through mince.
- When garlic is fragrant turn heat down to half and put in broccolini, cover with a large lid of plate and cook until broccolini is slightly soft.
- Add soba noodles to water and cook for 3-4 min until soft but slightly chewy. Rinse with cold water when done to reduce sticking and increase chewiness.
- Add spring onion to mince but leave a handful of the green part of the spring onion aside for garnish.
- Add all your sauces and mix well. If there is not enough water from the steam of the broccolini, add a little as necessary.
- Add soba noodles and crushed peanuts and mix through gently. Serve and garnish with spring onion.
