
Ingredients
- Japanese Soba Noodles, cooked and cooled according to packet
- 1 1/2 cups sugar snaps or snow peas, trimmed and cut
- 1 medium carrot, grated
- 1/2 cup spring onion, cut into pieces
- Ginger Soy Dressing2 tbs Lime juice
- 2 tbs soy sauce
- 1 tbs pure Maple syrup
- 1 tbs grated ginger
- 1 tbs sesame oil
- 1 tps chilli paste/sauce
- Black sesame seeds to sprinkle over the end salad
Method
- After you have cooked, drained and cooled Soba noodles according to the packet, place in a medium size bowl and set aside.
- In a smaller bowl or shaker, place all dressing ingredients, lime juice, soy sauce, maple syrup, grated ginger, sesame oil and chilli sauce, shake or whisk to combine. Set aside.
- Add sugar snaps or snow peas, grated carrot and spring onions to noodles and toss through.
- Now add the dressing mixture to your noodle mix and toss through well. Sprinkle the top of you salad with Black sesame seeds and enjoy!
