
Ingredients
- 1 can valcom coconut milk
- 3 tomatoes quartered
- 2 tsp black mustard seed
- 1tsp turmeric powder
- 1/2 tsp chilli powder
- 1 red onion finely chopped
- 2 garlic cloves finely chopped
- Bunch Fresh coriander
- 1 spoonful Tamarind paste
- 12 curry leaves
- Handful baby spinach
- 1/2 kg barramundi pieces
- 1 cup cokes white rice
Method
- Heat tablespoon olive oil in deep dish add mustard seed until popping stops. Add onion and garlic and fry gentle heat until onion softened
- Add turmeric and chilli heat slightly. Add curry leaves and heat through.
- Add tamarind and valcom coconut milk bring to boil. Reduce to simmer adding chopped tomato. Simmer for 30 mins.
- Add baby spinach and fish and cook for 10 mins on simmer.
- Serve with white rice garnish with fresh coriander.
