
Ingredients
- Kewpie sirarcha mayo
- Salmon
- Pearl couscous
- Tomato
- Lemon
- Olive oil
- Dill
- Mint
- Red chilli
- Cucumber
- Dried apricots
- Cashew nuts
Method
- Cook pearl couscous in hot boiling water for 13 minutes and then drain and rinse with cool water
- Let pearl couscous dry and put into a large bowl and add olive oil, lemon and salt and the place in the fridge for 10 minutes
- Chop tomato, dill, cucumber, cashew nuts, mint, dried apricots and chilli and then add to the pearl couscous salad.
- Add more olive oil, lemon and salt to the pearl couscous salad to taste
- Marinate skin on salmon with olive oil, chilli and lemon for 10 minutes and then pan fry
- Generously dress the salmon with Kewpie sirarcha Mayonnaise and when plating with a side of pearl couscous salad
