
Ingredients
- 500gm chicken mince
- 3 tbs sweet soy sauce
- 2 chicken stock cubes
- 3 cups of cold water
- 2 cloves of garlic crushed
- 1 onion diced
- 4 carrots peeled and diced
- 1 capsicum diced
- 1 cup of any frozen veggies (optional)
- 1 450gm packet of brown rice(microwaveable)
- 100gm of butter
- Salt pepper to taste
Method
- Brown chicken mince in frypan and break up to small clumps
- Place chicken mince in slow cooker and add soy sauce
- Add chicken stock cubes and water
- Place onion and garlic in the same frypan used to brown mince, add butter and allow to cook slowly over low heat, once opaque, add to slow cooker
- Add carrots diced, capsicum diced, into slow cooker
- Turn slow cooker on high for two hours, once bubbling gently turn to low, in the last hour of cooking add (frozen veggies, optional), packet of brown rice, (no need to microwave)
- Add salt pepper to taste, cook for a further hour on low
- Enjoy
