
Ingredients
- Frozen Udon
- Golden curry japanese curry mix
- Baby charisma potatos
- Carrots
- Onion
- Vegetable stock
- Spring onions
Method
- Prepare your vegetables. Dice onions, chop carrots and potatoes into bite size pieces.
- Add oil into a pot and brown onions.
- Add potatoes and carrots and cook until it starts to brown. Roughly 5-10 minutes.
- Pour vegetable stock along with water and let it simmer until vegetables are soft and ready to your liking.
- Take off the stove and add the curry blocks. Stir into the curry until blocks dissolve leaving a thick curry mixture.
- Bring back to boil and simmer for a further 5 minutes.
- Boiling water in another pot and cook the udon noodles until soft.
- Plate the noodles in a bowl and add the curry mix over the udon.
- Chop the spring onions and garnish over the top.
