
Ingredients
- 1 packet Obento soba noodles (180g)
- 1 small zucchini
- 100 grams mushrooms (assorted or your preferred mushroom)
- 80 grams grams kale
- 80 grams fried puff tofu
- 3 tablespoons sesame oil
- 2 tablespoons of soy sauce
- 1 1/2 tablespoon of crushed garlic
- 2 tablespoons olive oil
- 1/4 - 1 tablespoon of chili flakes ( optional- dependent on taste)
- Sprinkling of sesame seed for garnish (optional)
- 1 spring onion for garnish (optional)
Method
- Cook Obento Soba noodles according to instructions
- Heat olive oil in pan on low- medium heat.
- Add tofu into pan for 3-4 minutes ( I like to cut the tofu puffs in half first)
- Remove tofu puff and set aside. Add minced garlic and leave for 30 second in pan. Add diced zucchini, mushroom and chopped kale
- Add soy sauce and seasame oil
- Leave for 5-7 minutes for vegetables to be tender and mix occasionally
- Add tofu into pan and mix. Leave for 1 minute
- Add noddles into pan and mix everything throughly. Leave for 1-2 minutes
- Add desired amount of chili flakes and mix (optional)
- Serve into bowl and add chopped spring onion and sesame seed as garnish (optional)
