
Ingredients
- Valcom Red Curry Paste
- Coconut Milk
- Vegetable Stock
- Marinara Mix
- Mixed vegetables, I used home grown zucchini, carrot, green capsicum and broccolini
- Fish sauce
- Sugar
- Vermicelli noodles
Method
- Cook 2 tbls of Valcom Red Curry paste until fragrant, add marinara mix.
- Add chopped vegetables of your choice and 1 can of coconut milk.
- Add vegetable stock to 1/2 cup hot water and add to pan.
- Cook until vegetables are to your liking. Add 1 tsp sugar and a dash of fish sauce to taste.
- Cook noodles according to packet, add to bowl and spoon laksa on top!
