
Ingredients
- Hokein Noodles
- 1 Chilli
- 3 Spring Onions, trimmed, sliced
- 1 lime, wedges (to serve)
- 600g marinara mix
- 2 cups vegetable stock
- 200g Laksa Paste
- 500g Coconut Milke
- 1tbs coconut oil
- 1tbs caster sugar
- 4 Boiled Eggs
- Fresh Coriander, garnish
Method
- Heat coconut oil in a large saucepan over medium-high heat. Add spring onion and cook for 2-3 minutes until softened.
- Add sugar and cook for 1 minute.
- Stir in laksa paste and cook for three minutes.
- Add coconut milk, stock,three cups of water and as much chilli as desired. Bring to simmer and cook for 10 minutes.
- Meanwhile, place noodles in heatproof bowl and cover with boiling water and set aside for two minutes / cook as per packet instructions.
- Add marinara mix to coconut broth, cover and cook for four minutes or until just cooked.
- Drain noodles and divide between four bowls. Ladle laksa into bowls and garnish with coriander and remaining chilli. Serve immediately with lime wedges.
