
Ingredients
- Sushi rice
- Obento Yaki nori for sushi
- Sushi rice seasoning
- Tempura chicken tenders
- Avocado
- Japanese mayonnaise
Method
- Place 2 cups of sushi rice in rice cooker. Wash rice until clear.
- Add just under 2 cups of cold water to sushi rice and cook in rice cooker.
- Place tempura chicken tenders in oven on recommended temperature for 20 mins.
- Once rice is finished cooking, remove from rice cooker and scoop into a flat bowl. Pour 4 tbsp of sushi seasoning over rice. Use rice spatula to mix seasoning. Do not stir but use rice spatula in a cutting motion.
- Place wet tea towel over bowl of rice and let it cool.
- When rice is cooled, use sushi maker or roll rice manually to make cylindrical shape. Place cut up chicken tenders, avocado and mayonnaise in the middle of rice.
- Place Obento Yaki nori sushi sheet on bamboo mat. Plunge or place cylindrical sushi roll onto the nori sheet and roll using the bamboo mat.
- To seal the ends of the nori sheet, run a finger line of water along the edge.
