
Ingredients
- 100g Udon Noodles
- 160g Vegan Duck (or you can substitute with tofu)
- 60g Snow Peas
- 2 tsp Sesame Oil
- Splash of Dark Soy Sauce
- 1 tbsp Soy Sauce
- 2 tsp Chilli Oil (more or less to taste)
- 1/2 tsp Garlic
- 1/2 tsp Ginger
- 2 tbsp Peanut Butter (more or less to taste)
- 2 tsp Brown Sugar
- Fried shallots (Optional)
- Sesame seeds (Optional)
Method
- Cook your vegan duck according to packet instructions and set aside.
- Combine sauce ingredients (soy sauce, dark soy sauce, sesame oil, chilli oil, garlic, ginger, peanut butter and brown sugar) in a frying pan.
- Cook your udon noodles according to packet instructions. Save 1/4 cup of cooking water.
- Heat your sauce ingredients on a medium heat. Slowly mix in the 1/4 cup of water from noodles to the frying pan.
- Add your vegan duck, snow peas and udon to the frying pan. Stir to combine. Cook until sauce is at desired consistency. More water can be added if desired.
- Top with sesame seeds and fried shallots. Serve your noodles!
