
Ingredients
- 500grms chicken thigh
- 400ml coconut milk
- Peanut butter smooth
- Kecap manis
- Brown sugar
- Fish sauce
- Red curry paste
- Pinch salt
- Mince garlic
- Mince ginger
- Like juice
- Curry powder
Method
- Pre heat oven 180 degrees Make marinate for chicken 4tbs coconut milk 1tbs peanut butter1 tbs brown sugar 1tbs red curry paste 1tbs Kecap manis1tbs fish sauce Mix together in a bowl and add chicken thigh pieces. Let marinate in the fridge for 1hr.
- Make sauce Can of coconut milk1/4 cup peanut butter 1tbs Kecap manis1tbs fish sauce 1 tbs brown sugar 1 tsp mince garlic 1 tsp mince ginger 1 tsp curry powder Like juice to be added prior to serving
- Fry chicken pieces for 5-6 mins each side. Place on baking tray and put in oven for 15 minutes. Whilst chicken is cooking, put sauce on low. Add lime juice prior to serving.
- Service with rice and cucumber sticks
