
Ingredients
- 1 salmon fillet or chunks
- Wasabi
- Noodles (soba, egg or wheat)
- 1 Cucumber cut into matchsticks
- 1 green capsicum diced
- 1 carrot shredded
- 1/4 cup smooth Peanut butter
- 2 cloves garlic minced
- 1 tsp minced ginger
- 2 tbsp soy sauce
- 2 tbsp rice wine vinegar
- 1 tbsp tahini
- 1 tbsp sesame oil
- 1 tsp Chilli
- 2 spring onions sliced finely
Method
- Boil a pot of salted water and cook noodles according to packet directions
- Whilst noodles are boiling mix peanut butter, garlic, ginger, soy sauce, rice wine vinegar, tahini, sesame oil, chilli and spring onion and stir until smooth
- Drain noodles and rinse under cold water
- Add noodles to sauce and toss to coat
- Add raw vegetables on top and mix then place into two bowls
- Slice salmon finely and arrange on a plate with a squeeze of wasabi
