
Ingredients
- 500g Pork Mince
- 1 can Valcom Water Chestnut Slices (chopped)
- 1 T peanut oil
- 2 garlic cloves (crushed)
- 2 t fresh ginger (grated)
- 1 onion (diced)
- 4 shallots (sliced)
- 1 carrot (grated)
- 2 stems Broccolini (chopped)
- 8 mushrooms (diced)
- 1 iceberg lettuce (leaves separated) for serving
- 1/2 cup peanuts (chopped) for serving
- 1/2 cup fried shallots for serving
- Sauce- 1 T cornflour, separate with 4T water and add 2 T soy sauce, 2 t sesame oil, 1 T mirin, 2 T Chinese cooking wine, 2 T oyster sauce, 2 t coconut sugar
- I will often find other veggies in the fridge and add eg cauliflower chopped finely
- 1 cup chopped Chinese rice vermicelli which has been pre soaked in boiling water for 1 minute and drained)
Method
- Heat oil in wok over high heat and stir fry garlic, ginger and onion for 30 seconds
- Add pork and cook for 1 minute
- Add rest of vegetables and noodles. Cook for another minute
- Add sauce and cook for 2 and a half minutes until it thickens
- Serve in lettuce cups and sprinkle with peanuts and dried shallots
