
Ingredients
- 450g Firm Tofu
- 1/3 cup Cornflour
- Asian greens
- 1 tbsp grated ginger
- 3/8 cup Soy sauce
- 1/4 cup Mirin
- 1 tsp Sugar
- Sushi rice
Method
- Cut tofu into cubes and par boil for 2 mins in a pan of water. Remove and let cool. Boil the Asian greens in the same water until tender
- Make sushi rice according to packet instructions
- Combine ginger, soy sauce, mirin and sugar in a small pot. Bring to the boil. Combine 1 tsp cornflour in 1/4 cup water and add to the sauce, bring back to the boil and turn off the heat
- Combine cornflour with plenty of salt and pepper. Dredge cubes of tofu in cornflour mixture and fry in about 1 cm of oil, turning so all sides are cooked until crispy.
- Put rice in a bowl, top with Asian greens and tofu and drizzle sauce everywhere.
