
Ingredients
- 3 tablespoons Valcom Red Curry Paste
- 1 x can Coconut Milk
- 2 cloves of Garlic
- A splash of Soy Sauce
- 2 tablespoons Sesame Oil
- 4 x Salmon Fillets
- 3 tablespoons Peanut butter
- Steamed rice and your choice of green vegetables to serve
Method
- Heat 1 tablespoon sesame oil in a pot, then fry chopped garlic for 1 min
- Add 3 tablespoons Valcom Red Curry Paste, stir and fry until dark red and frangrant
- Add 3 tablespoons peanut butter, 1 can of coconut milk, and a splash of soy sauce, bring to a simmer whilst stirring until combined, about 2 mins
- While the sauce is simmering, heat 1 tablespoon of sesame oil in a fry pan, and place the salmon fillets skin side down. Fry on medium heat until skin is crispy (about 2 mins), then turn and cook through (about 4 mins depending on the thickness of the salmon)
- Serve the salmon alongside steamed rice and veggies, with the curry sauce drizzled on top. Enjoy!
