
Ingredients
- 300g salmon
- 2 tbsp mirin
- 2 tbsp cooking sake
- 2 tbsp light soy sauce
- 1 tbsp sugar
- 1 bowl of rice
- Bonito flakes
- Furikake seasoning
- 1 small radish chopped
- 1 soft boiled egg
- Thinly sliced chilly
- Handful of edamame beans
- 2 tbsp sushi seasoning vinegar
- 1 tablespoon cooking oil
Method
- Place salmon in a bowl and wash. Then place on a paper towel and pat dry. Then add salt and pepper to taste on both sides.
- Preheat a pan and add oil. When the pan is hot, place fish skin side down and put lid on pan for 10 mins.
- In the mean time, mix together the mirin, sake, sugar and soy sauce in one bowl.
- After the ten mins, reduce the heat and pour the sauce on the fish. Cook until the sauce is thick and set aside.
- In another pan, boil the edamame beans for 5 mins. Then set aside and add eggs. Boil eggs for 8 mins and set aside until cooled, then cut eggs in half.
- Wash a radish and cut into thin strands. Then place in vinegar.
- In a bowl, spoon the amount of rice you want, place the radish, teriyaki fish, furikake seasoning, bonito flakes, edamame beans, and egg into the bowl how ever you like.
- Cut a small chilli into thin strands and place on top of the dish as garnish. Enjoy!
