
Ingredients
- ***** ingredients for Salmon:
- 2 x Super fresh / skinless/ boneless salmon fillet
- 1/2 cup Obento teriyaki marinade
- 10 wonton wrappers - sliced thinly ( julienne)
- 500 ml vegetable oil for deep frying
- *****Spiced Summer Salad Ingredients:
- 1/2 cup Thinly sliced cucumber
- 1/4 cup Thinly sliced carrot
- 1/4 cup edamame/ soy beans
- 2 pink radish - thinly sliced
- 1 bird's eye chilli thinly sliced / minced
- 1 tbsp crispy fried garlic
- 1tbsp toasted sesame seeds
- 1/4 cup fresh coriander leaves
- Few mint leaves
- Lemon zest
- Juice of one lemon
- 1 tsp sesame oil
- ***** Accompaniments for Salmon Tataki:
- Kewpie Roasted Sesame dressing
- Obento Teriyaki Marinade
- 2 tbsp fresh lemon juice
- 1/4 TSP minced chilli
- 1/4 TSP minced ginger
Method
- ***** Preparing Tataki SalmonDip salmon fillets into Obento Teriyaki Marinade, then place on baking tray. With a kitchen blowtorch quickly sear the serving side ( flesh side ) of salmon fillet ( should still be raw in centre). Set aside until ready to serve
- ***** Crispy wontonsHeat oil in heavy bottomed pot over medium - high heat ( approx 350 degrees F) place thinly sliced wonton pastry into oil & fry until golden & crispy ( only takes seconds !) Remove from oil & place on paper towel until ready to serve
- ***** Spiced Summer Salad:
- Combine all ingredients when ready to serve.
- Place a handful of crispy wonton pastry on place , carefully slice Salmon Tataki & place on top of crispy wonton - scatter some lemon zest on top of salmon..Place Spiced Summer Salad alongside Salmon Tataki.

- Obento Teriyaki Marinade combined with lemon juice, chilli & ginger placed in side dipping bowls
