Method
- Cook salmon to liking approx 3 mins each side
- Cook soba noodles as per packet, remove and run cold water through them to prevent sticking
- Dressing: combine all ingredients, if it’s too thick- add a little water to thin dressing
- In a large bowl, add soba noodles, edamame, spring onion, coriander and avocado. Drizzle over dressing and gently toss. Serve into 2 smaller bowls.
- Lay cooked salmon on top of salad, add a sprinkle of wasabi peas, top with pickled ginger and drizzle sriracha mayonnaise. Serve
