
Ingredients
- 500g fresh raw salmon, diced into 2 c/m cubes
- 2 tbs soy sauce
- 2 tbs rice wine vinegar
- 1 tbs sesame oil
- 1 tbs honey
- 100g soba noodles
- 1 avocado, sliced
- 1 carrot, 1 small cucumber, peeled into thin slices
- Edamame (or peas or beans, chopped)
- Seeds to garnish (eg sunflower, sesame)
- Kewpie roasted sesame dressing
Method
- In a small bowl, combine salmon, soy sauce, rice wine vinegar, sesame oil and honey - stand in fridge while preparing other ingredients
- Cook soba noodlesAccording to directions, stand in fridge while preparing remaining ingredients
- Arrange vegetables, avocado, beans, noodles and salmon in 4 bowls
- Dress with roasted sesame dressing, sprinkle with sunflower and sesame seeds.Serve
