
Ingredients
- Fresh salmon
- Mash potatoes
- Fresh corn
- Spring onions
- 1 Egg
- Bread crumbs
- Parsley
- Salt
- Pepper
- Wasabi
Method
- Cook fresh salmon in oven for 10-12 minutes at 180 degrees
- Mash 4-6 medium sized cooked potatoes with a tablespoon of butter
- Add spring onions, 1/2 cup of frozen corn, salt and pepper to your liking.
- Combine salmon and mash ingredients and add one eggs with 1/2 panko breadcrumbs.
- Using wet hands, shape into 12 patties and gently roll into panko breadcrumbs.
- Place into fridge for no less that 20 minutes.
- Once air fryer is at 375 degrees arrange patties on greased try in air fryer basket; spritz with cooking spray. Cool until set and golden brown, 6-8 minutes.
- Serve with preferred salad and a squeeze of wasabi.
