
Ingredients
- Luv a Duck …. I pkt of Peking duck duck breasts chopped
- I punnet cherry tomatoes halved
- 3tbsp volcam red curry paste
- I can coconut milk
- 1 tbsp fish sauce
- 1 can pineapple pieces
- 1 can lychees halved
- Handful of green peas
- 1 bunch of Basil
- 6 kaffir lime leaves
Method
- Put half coconut milk into frypan with red curry paste, stir til oil rises approximately 3mins
- Add tomatoes, pineapple, peas, fish sauce, lychees rest of coconut milk.Cook til heated.. do not over cook approximately 5 mins
- Add duck, and kaffir lime leaves cook for 3 mins
- Turn off heat stir in basil leaves and serve.I like to serve on jasmine rice
