- Rice Noodles
- Sunflower Oil
- Spring Onions
- Red Chili
- Soy beans
- Sesame Oil
- Sesame seeds
- Zucchini
- Rice wine vinegar
- Mirin
- Coriander
- Lime
- Salt
- Salmon
Method
- Cook the noodles as per instructions and set aside with a little sunflower oil mixed through So they don’t stick together.
- Chop the spring onion and zucchini and stir fry for 3 minutes with sunflower oil.
- Add blanched soy beans and warm through. Turn off the heat and add the rice noodles and remaining ingredients.
- Pan fry the salmon to your liking.
- Serve up stir fry mix and top with salmon, lime zest and lime juice. Season with salt and pepper and enjoy!
