
Ingredients
- 2 Tbs Valcom red curry paste
- 2 cans coconut milk
- 1 Tbs soy sauce
- 1 tsp brown sugar
- Vegetables of your choice
- Rice
- 2 Tbs Desiccated coconut
- 1 lime
Method
- Prepare all vegetables while wok / frypan heats
- Add some oil of choice to the pan and allow to heat
- Add curry paste to pan and cook off until fragrant
- Add 1 can of coconut milk, 1tbs of soy sauce and 1 tsp of brown sugar
- Add all veggies and let simmer until veggies reach your desired texture
- To prepare the coconut-lime rice, add one can of coconut milk and water with a pinch of salt to the uncooked rice and cook as you normally would
- Toast coconut and zest the lime
- Once the rice is cooked, add a squeeze of fresh lime juice and mix the zest through. Top with the toasted coconut
