- Green onion
- Garlic
- Ginger
- Valcom Red Curry Paste
- Vegan fish sauce
- Soy sauce
- Pumpkin
- Broccoli
- Veggie stock
- Coconut cream
- Brown sugar
- Thick rice noodles
- Vermicelli noodles
- Tofu (firm)
- Carrot
- Cilantro
- Crushed peanuts
- Lime
Method
- Cut pumpkin into larger approx 2inch cubes, toss in oil and place in oven to roast while you cook.
- Sauté whites of the green onion (save the green parts for garnish), garlic, ginger, carrot in pot
- Add Valcom Red Curry paste and simmer 5 minutes.
- Add veggie stock, coconut cream, soy sauce, vegan fish sauce, brown sugar let simmer 10-15 mins until carrot is soft.
- While waiting, fry tofu in pan.
- Take laksa off the heat, add broccoli florets & tofu. Stir & cover pot.
- Boil water to cook noodles as directed.
- Once noodles are cooked, ladle laksa over top. Garnish with roasted pumpkin, cilantro, green onions, peanuts and lime.
