
Ingredients
- 1 pack Obento Yaku Nori
- 2 cups sushi rice
- 1 thinly sliced carrot
- 1 small sliced cucumber
- 1 thinly sliced avocado
- Approx 100g left over roast chicken
- 2 tbsps rice win vinegar
- 1 tbsp caster sugar
Method
- Rinse the rinse and cook in rice cooker with 3 cups of water. When cooked remove the pot from the cooker and allow to cool slightly..
- Transfer the rice to a glass bowl. Add the vinegar and sugar and mix well with a wooden spoon.
- Place the nori shiny side down on a bamboo or silicone mat. Spread a layer or rice over the nori leaving a small strip uncovered along the top edge.
- Add a line of cucumber, carrot, avocado, and chicken along the bottom edge.
- Use the mat to roll up the sushi and dampen the top edge lightly with water to make it stick.
